Le bouillon M17 est une modification du milieu M16. Les streptocoques lactiques sont exigeants sur le plan nutritionnel et n\u00e9cessitent des milieux complexes pour une croissance optimale. Le <a href=\"https:\/\/en.wikipedia.org\/wiki\/Glycerophosphate\" target=\"_blank\" rel=\"noopener\">glyc\u00e9rophosphate<\/a> disodique maintient le pH au-dessus de 5,7. Le maintien d&rsquo;un pH ad\u00e9quat est crucial, car un pH trop bas entra\u00eene une alt\u00e9ration de la culture et une diminution du taux de r\u00e9cup\u00e9ration des streptocoques lactiques.
